Hump Day

Damn, these hump days just keep coming, don't they?

A very busy "affairs" day today. As in, getting your "affairs" in order. I had to follow-up with Geico as I had not yet received the binder for driving the RV. Then I had to fill out the application for a Chinese visa and mail that to my Grandpa. Then I had to make an appointment with the DMV so that my car can get properly registered. Stuff like that totally gives me anxiety.

But now that my thoughts turn to something else - What should we do about food on the RV??? Now, we'll clearly be eating SEVERAL meals of fastfood while we're traveling, but there will be meals to be had at the campsite. Thode had suggested we divide up the meals, which is a good idea, except there are really only a few meals to worry about, so I guess some of us would double up on duty? And there might be a lot of doubling up on food that way - you figure bread that we'd use for toast in the morning could easily be used for sandwiches at lunch. We could each bring our own food, but that would result in 9 packages of hot dogs, and 5 bottles of ketchup. And it would be more expensive for everyone.

I dunno.

Oh! Make a master list of the meals/food you'll need, one person goes shopping, and then the bill is split up between everyone.

spaghetti o's and pasta meals- easy, few dishes to deal with, not terrible tasting. cans of anything are good (ie- creamed corn!), but remember someone has to bring a can opener! if you're going to have a campfire anywhere, it's worth learning how to make foil dinner (will put up instructions if you will have fires...). you're the queen of the outdoors!!!

get steak sauce, corn (cob, frozen- might thaw, but it's ok, or can), some potatoes, bell peppers if you want, onions, and traditionally ground beef of some sort. I use the veggie burger or just the vegetables. You need some aluminum foil, and if you don't use meat (or use really lean meat), some olive oil. other good stuff is salt and pepper, and remember to pack a peeler (if you don't like potato skins), and a knife to slice stuff. You can put in carrots or green beans or any other stuff you want.
Pull out 18 inches or so of foil. If you need oil, drip a spoonful or so on there, and spread it around (you can use a papertowel or a spoon or something if you're sareet...). Put down like half a handful (less than you think) of (veggie) burger, then dribble a little steak sauce on it (you can use a little katsup if you like instead- don't make stuff too wet). If you want to peel the potatoes, do that, or just scrub them (or again, sareet prolly does both ;) ). Slice them pretty thin (1/4 in or so) and spread a layer over the burger, or right on the oil if it's all veggies. Put on other stuff- half a handful of corn, maybe 1/4 of a bell pepper, whatever you want. Put some salt and pepper on top. The important part is to make the whole lump of food kind of long, so there's plenty of room on the edges of the foil. Fold in the sides, and roll the top closed (or buy those roastbag things they make out of foil now). Put the whole thing in the fire, or on a little grill rack in the fire, if you have one of those. Let it cook 20 min or so, till you think the meat is done (you can check), and pull them out of the fire with some tongs. Don't forget to pack those either!

Foil snack: You need butter, bread, pie filling of your choice (or apples, nutella, cheese, etc). Leave the butter out until it's soft enough to spread. Take 2 pieces of bread and enough foil to wrap around a sandwich. Put butter on both sides of one slice of bread, set it on the foil, put some fruit or something on it, butter both sides of the other slice of bread, and set it on top, sandwich style. Wrap the foil around the sandwich, and roll the sides so that it pinches the edge of the bread slices together (you want them to stick together a little when it's done, so you don't squirt hot pie filling on yourself). Put tightly wrapped package in the fire for like 5 min, flip, leave it a couple more minutes. Take it out immediately if you smell burnt bread... use the tongs again!

Foil apples: If you have a fire burning for awhile (like all day), you can make these. Take apples, butter, brown sugar, and some cinnamon (also good for toast in the morning). Cut the apple in half and take out the core- try to leave the top and bottom intact, with just a hollowed out center. Get a chunk of butter about 3/4 the size of the hole, and put it on half the hole. Scoop in some brown sugar, then sprinkle the whole thing with cinnamon. Put the apple back together- it should look sort of like you never cut it. Wrap it up tightly in plenty of foil. Take a poking implement of some sort and move some of the fire out of the way. Bury the apple under the fire you moved, and leave it there like 20 min. Unbury it. Get a spoon. Yum.

Be careful when you get any of these out of the fire, since they will be really hot. You probably know that, since it's made out of fire... Good luck. Let me know if you need to know good ways to build a fire, too (extrapolated from last camping post...)
